The John Knox Preface | Cannabis Cocktail
The John Knox Preface is a take on the classic punch recipe with some twists and turns that arrive unexpectedly upon your tongue. How is this punch surprisingly different? That would be the processing of the juices. What the John Knox has done for your palate is allow ingredients that you are familiar with to take on deeper flavors, ones that read beautifully and taste even better. One of these ingredients is grilled pineapple juice. To do this juice, find a pineapple and take off (carefully with a sharp knife) the hard-outer skin. Slice the pineapple into one-inch rounds and grill over charcoal or in a cast iron grill pan until caramelized and charred well at least five minutes per side.
I always freshly squeeze my juice and you should too. Your beverages will just taste better, and your guest will always take note of the quality of the ingredients.
Ingredients:
½ quart Grilled Pineapple Juice
1 quart freshly squeezed Orange Juice
1 quart pomegranate Juice (The bottled kind works here)
½ quart White Cranberry Juice
2 cups Medicated Simple Syrup made with raw honey
1 liter Pickett’s Ginger Beer-Extra Hot and Spicy GB style
Coconut Water ice Cubes
Prep:
Remove the core from several pineapples.
Slice into rounds and grill for five minutes per side, cool and juice.
Mix all the juices and the THC infused (to your taste and strength of course!) simple syrup to a punch bowl. Top with Angostura or the like bitters, scrape fresh nutmeg over the top and mix with fresh coconut water ice cubes.
