No Flour-No Eggs-No Sugar-No Dairy
Can I just say, I don’t eat vegan and I don’t cook for vegans, but I do consult for a lot of vegans looking for a way to medicate with a healthy alternative to an edible. So, I made up this cookie and I don’t hate it, so it’s gotta be awesome for people who eat this way all the time. It’s easy to add stuff like whatever a vegan would have around that they thought was delicious, like nuts berries or seeds. I thought a drizzle of vegan chocolate would be awesome too. I’ll add some tips about adding in some different things in the instructions. I added some hemp protein and CBD into the last batch, but you can add some THC infused coconut oil into this recipe super easily. You’ll have to figure out your own dosage as there are too many variants for it to be part of the recipe. This makes about a dozen cookies, so if you ever wondered how you’d use grade school math, now is the time. For most people, a reasonable dose per cookie is five to ten mgs, that way you can eat one or two if you wanted and not get hit over the head later. So you’ll want to multiply the amount you determine to be good dose for you by 12 and add that in the mixing process. For 5mg cookie you’ll need to add 60mgs of infused oil. Be very careful that what you add isn’t such a large amount of additive that it alters the batter. Especially with this recipe.
Ingredients
¾ cup mashed ripe banana (about two large)
1 cup old fashioned oats
3 tablespoons nut butter (I like almond)
1 teaspoon Vanilla
½ teaspoon cinnamon
⅛ teaspoon salt
Instructions
Preheat the oven to 350°
Add oats to food processor and pulse to partially grind oats
Add banana and remaining ingredients (including medicated coconut oil or cbd) and blend until smooth
Put two teaspoons of batter onto parchment lined cookie sheet smooth slightly into a cookie shape
Place add-ins on the top of the cookie, tapping them lightly to adhere them to the cookie. I add hemp hearts, sunflower seeds and pumpkin seeds to mine. I like sour dried cherries and chocolate as add-ins too, or use your favorites like coconut or other dried fruits.
Bake for 12-14 minutes
