Homemade Buttermilk Pancakes | Cannabis Recipe


My best recipe for homemade pancakes. The egg whites make them super fluffy and the buttermilk gives them an amazing flavor. If you can’t find buttermilk, you can substitute plain yogurt, kefir or any fermented lacteo product. This recipe has 3 different parts that must be combined at the last minute, and then immediately cooked. It works best on a flat griddle that fits 6 equal sized pancakes. Serve with infused maple syrup, honey, or our favorite, black cherry jam.

Ingredients:

  1. 100 grams flour (white flour makes fluffier pancakes but whole wheat is more flavorful, I recommend stone ground)

  2. 3 grams baking powder

  3. 1 egg (yolk and white separated)

  4. 40 grams sugar

  5. ~25 grams lite olive oil

  6. ~50 grams buttermilk

  7. 1 gram salt

  8. Butter

Prep: 10 minutes Cook: 5 minutes Yields: 6 pancakes

Preparation:

  1. Preheat a flat iron griddle or a skillet to medium heat. Be prepared to lightly butter it.

  2. Sift the flour and baking powder together and place to the side.

  3. Separate the egg yolk from the white, making sure no yolk gets into the white.

  4. In a large bowl, whisk together the egg yolk and the sugar for 2 minutes.

  5. Slowly add the oil while whisking until the mixture starts to thicken, you will notice a change in the consistency.

  6. Slowly add the buttermilk while whisking to combine all of the liquid ingredients in one homogeneous solution. The final batter should be the consistency of a slop.

  7. Take the egg white and beat it with the salt until it forms stiff peaks, if you’re lazy, soft peaks.

  8. Give a quick mix to the buttermilk mixture and add half the flour, folding together just until it is incorporated. Maybe 4-6 folds (kind of like a figure eight motion) google how to mix cakes if you don’t know what I mean.

  9. In the same manner, fold in half of the egg whites, being careful not to release too much air. You should notice small streaks of egg white when you finish.

  10. Quickly but calmly repeat sets 7 and 8 to fully add all of the flower and egg whites. Your final mixture should be roughly combined, do not overmix.

  11. Butter your pan and spoon a manageable sized pancake onto the griddle. They should be flipped once the bubbles around the outside start to break and remain hollow.

***Remember that the baking powder will activate once added to the buttermilk, so you must act fast to complete the final steps, and a griddle will allow all 6 pancakes to be cooked simultaneously, a must for these pancakes.
