Double Chocolate Cherry Cookies | Cannabis Recipe
This is one of my mom’s recipes and one of my favorite cookies. If you’re comfortable with edibles, swap out the regular butter for some cannabutter and you’ll have some delicious treats on your hands. All of my mom’s baking recipes use self rising flour which have baking powder and baking soda already mixed in the flour. If you don’t have it on hand or would rather not use self rising, the general rule is 1 – 1¼ teaspoons baking powder per cup of flour and ¼ teaspoon baking soda per cup of flour. Keep in mind that if you have a recipe that uses different ratios but works, don’t mess with it.
Ingredients
1⅓ cups dried cherries
2 eggs
2 cups flour
½ cup brown sugar
1⅓ cups sugar
1½ cups chocolate chips
1 cup cocoa powder
½ teaspoon vanilla
3oz black coffee
1 cup butter
Preparation:
Preheat your oven to 350° F
Use a sifter, fine colander or whisk to combine your dry ingredients in a large mixing bowl. Using a sifter or whisk helps break up any lumps in the dry ingredients. Make a well in the center for your wet ingredients. Set aside.
Cream together the butter and sugar. A stand or hand mixer is easier and faster, but a whisk, some elbow grease and a little time works just as well. Once the butter and sugar are thoroughly combined, mix in the eggs until smooth.
Add your wet ingredients into the well of your dry ingredients and combine. A rubber spatula works well for mixing and scraping the sides of the bowl. Mix in the dried cherries and chocolate chips once you’ve fully combined the wet and dry ingredients.
Use a tablespoon to portion your cookies onto nonstick baking sheets or trays lined with parchment paper, spacing the cookies about an inch apart.
Bake at 350 for 8-12 minutes. Cool on a baking rack and enjoy!
